I’ll admit it. We use food to help celebrate things around here. When my kids were finishing up their homeschool year, I knew I wanted to reward them with something tasty and fun. That’s why I made up these Sweet Celebration Cupcakes!
Making these cupcakes couldn’t be simpler. You just need your favorite cake mix or cake mix recipe, the wet ingredients to make it, frosting (homemade or store bought), and optional sprinkles or colored sugar, and Peeps Minis!
I went ahead and let my kids help me with every step of making these. They’re always begging to do stuff in the kitchen, and I honestly hate the mess. However, they did convince me on this special occasion, so I had helpers all over the place!
We did two batches, so they could have chocolate and white cake. Then, of course, they wanted chocolate and white frosting as well. Apparently we’re all about choices around here.
I set it up as a decoration station with lots of utensils for spreading the frosting, the shallow bowls of colored sugar sprinkles, and a spread of Peeps Minis for the final touch.
Once the cupcakes are baked, let them cool. Frost however you’d like. On most of ours, I had the kids dip the tops into shallow bowls of colored sugar (and sprinkles work well, too!).
This is a really easy way to put a little “wow” into the appearance of the cupcakes. It’s especially fun to dip the cupcakes with white frosting because the colors are intensified. It’s more muted with chocolate frosting, but still really fun.
You don’t have to dip them in sprinkles or colored sugar. It can be fun even without! Once you’re done with the frosting and optional sugar/sprinkle step, just plop an adorable Peeps Minis on top for the final touch!
We had a huge variety and ended up eating several, taking some to playdates, and sending some to work with Daddy to give a special treat to his co-workers. He brought the pan home empty, so I guess they were as big of a hit with the grown ups as they were with me kids!
When the folks at PEEPS® sent me some PEEPS® MINIS™ to sample, I couldn’t wait to make a sweet treat for my kiddos with them. Aren’t they super cute?
They’re around $3.99 a bag (24 come in a package) and have just 14 calories each. I’ve seen them on sale as cheap as $2.50 at Target, so you might keep an eye out. They come in Strawberry Crème, Chocolate Crème and Sour Watermelon. My kids loved the strawberry the best, and it’s no surprise that this chocoholic (ME!) loved the chocolate best. Sour Watermelon has a fun surprise, though. It’s bright green on the outside, and pink in the inside!
