When our family gets together, we love to enjoy a huge holiday meal. Pie always plays a big part in the dessert portion, which I love. What to do with all of those holiday leftovers, though? How can they be enjoyed in a new way? Behold, the Razzleberry French Toast Breakfast Casserole!
Marie Callender’s® Dessert Pies are a staple for our holiday meals because they make pie so simple, and the taste is just like from scratch. It saves me a lot of time when I have other traditional food items to prepare. We always eat ours with a big dollop of Reddi-Wip®. That’s my kind of comfort food!
Unfortunately, our family gatherings usually end up with a ton of leftovers. Sometimes we have 15-20 people at a gathering and a total of 10 or more desserts. I came up with this recipe as a way to use up some leftover pie. I know, you’re thinking pie leftovers? Yes, pies of all kinds! My kids usually polish off a lot of them, but there are generally a few fruity pies that need new life breathed into them for everyone to enjoy again.
For this recipe, I used half of a loaf of French bread. When I was picking up my Marie Callender’s Razzleberry Pie at Walmart, I saw these delicious fresh-baked French breads for just a dollar a piece. I only used half of one in my recipe, but you could easily use the full one to bulk up your casserole. You could also use leftover rolls in its place!
We chose Razzleberry pie for our dinner the night before, which we enjoyed with a huge mound of Reddi-wip on each slice. This Razzleberry French Toast Breakfast Casserole could easily be adapted using whatever yummy flavor of pie you have leftover, like Dutch Apple, Lattice Peach, Cherry Crunch, or even Southern Pecan Pies.
Razzleberry French Toast Breakfast Casserole
You Will Need:
- 1/2 – 1 loaf French bread
- 1 cup milk
- 4 large eggs
- 1/4 cup sugar
- 1 tsp cinnamon
- 1/4 cup (4 Tbsp/half a stick) melted butter
- 2-3 slices of leftover Marie Callender’s Razzleberry Pie
To Make:
- Preheat your oven to 350 degrees.
- In a greased or nonstick 9×13 pan, tear the French bread into bite size pieces and spread throughout the bottom of your pan.
- In a small bowl, lightly beat together the milk, eggs, sugar, cinnamon, and melted butter until combined. (I just used a fork.)
- Slowly pour the milk mixture over the French bread pieces in the 9×13 pan.
- Gently crumble your leftover Razzleberry Pie pieces and pour on top of the bread mixture in the pan. Lightly stir it all together until it is combined.
- Bake at 350 degrees for 30-35 minutes until it is bubbly and golden brown on top.
- Allow to cool for about 5 minutes before serving. (Optional: Serve with a dollop of Reddi-wip on top.)
My family has enjoyed this french toast casserole with a bit of Reddi-wip and a few strips of bacon or links of sausage to round out the meal.
The leftover pie gives it the fruity, juicy component. The butter allows it to crisp up on the top to provide some crunch. The french toast ingredients transform that leftover pie into a totally different comfort food to enjoy in a whole new way.
