Okay, let me just say that I got some yummy produce this week from Bountiful Baskets. I am using this food co-op until we start getting fresh, local, pesticide free yummies from my CSA. 🙂
Anyway, I got several good things this week.
The Good:
- Cantaloupe
- Pineapple
- Cucumber
- Bananas
- Lemon
- Butternut Squash
The Bad:
- Just kidding, there isn’t a bad 😉
The Skeery:
- Asparagus (and they are HUGE)
- Cabbage
- Cauliflower
- Kale
Okay…. forgive me if the items in the skeery category are your favorites, but these are things I just don’t purchase on my own.
My hubby swears he loves asparagus, but he honestly will ONLY eat it canned. We’ve ordered it out on occasion and he acts like it’s not the same food. haha
Cabbage… Eeeeeeeeeeeek! Okay, I hate how it smells, I don’t like coleslaw or sauerkraut, I’m not making eggrolls…. what are my options here?
Cauliflower… I’d love a tried and true cauliflower recipe for non-cauliflower people. Any delicious cauliflower/potato and cheese mash recipes??
Kale – I used the kale from last time in a super delicious batch of Zuppa Toscana copycat soup. It was really good but didn’t use it much. Everyone was raving at the Bountiful Baskets site about kale chips… Yes, we’ve had them before. Yes, we ate them. Problem is, you have to eat them hot or it’s not worth it… and I’m not going to convert ALL the kale I got into these chips. Plus, people were talking about dipping them like real chips… unless I just had mutant kale last time, mine has always crisped up VERY brittle and delicate and could not withstand a dip weighing it down.
Okay, I realize I now sound like a really picky eater myself. I am, to an extent. The bigger problem, though, is my husband. Yes – I said husband. He is one that will turn his nose up AT DINNER in front of the kids (!!!!) and will push extra veggies off to the side (like if I’ve “hidden” something in spaghetti sauce or something) and throw away a good 1/2cup or more. What a weirdo! So wasteful and it also makes me feel super bummed that I spent all that time cooking to have him just chunk it in the trash.
I’d LOVE to hear what you all have to say! I know there are some amazing cooks out there reading this…. lend me your skillz for just a few minutes, please! Share your recipes or link me to YOUR favorites. Usually, I would just browse Food.com, but I’m wanting tried and true today!

we like most of our veggies raw at our house. i think it is a texture thing. For the cabbage, I shred and toss with vinegar, and a pinch of salt and black pepper. Asparagus is pan seared in a pan coated with a non stick spray, and also add a pinch of salt and pepper. I have also heard of a somewhat good for you ranch dressing made using a Greek yogurt (with the other yogurt cups at the store) and spoonful of the dried ranch dressing mix.
Healthy snack for kids:
Take some of your fresh veggies and slice them think and flatten if needed (broccoli, cauliflower etc) lightly brush with olive oil and favorite spices (i like garlic, salt and a bit of pepper) and back till done. My kids eat Kale, carrots, brocolli (all the veggies kids normally wouldnt) this way.

Cabbage and asparagus are my favorites. Yummmm. I love it raw or cooked. I put it in everyday salads with lettuce, spinach, raw corn, tomato, sprouts, and anything else I have. It is great in fish tacos. I love it in stew.
