This raspberry red velvet parfait takes me back to my childhood! My grandmother makes the world’s BEST red velvet cake. There’s just no contest to this fact. I remember her having leftover ends and parts that she cut off to make a layered cake more level. THIS recipe would be the perfect way to use up those cake bits so nothing would go to waste.
Adding some fruit makes this dessert seem a bit less indulgent. Feel free to add more berries if it keeps your conscience clean. 😉 You can also substitute the red velvet cake for another flavor, but, WHY? Red velvet is the best flavor out there. If you don’t think so, then you obviously haven’t tried my Meme’s recipe. We’ll save that for another day.

Raspberry Red Velvet Parfait
Ingredients:
- 1 Cup Whipped Topping
- 10 Raspberries
- 12 Bite Size Pieces of Red Velvet Cake
- 1 Four Ounce Glass
To Make:
- Add ½ cup of whipped topping to the bottom of glass.
- Add four raspberries.
- Add four pieces of red velvet cake.
- Repeat process with whipped topping, then raspberries, then cake until your glass is full.
- If you have any leftover ingredients, eat it to hide the evidence. 🙂
As you can see, this recipe is perfect for the convenience cook. If you have a boxed mix in the pantry or even a cake from the store, you’re set. This is the perfect dessert for one, but it could obviously be scaled to make as many as you want!
This would also be a cute Valentine’s Day dessert option. It would be great for a bridal shower or fancy dinner party. It would also be a great little treat for yourself at the end of any day for any reason at all.
