My family has gone pretty primal with our diet, which means that we’re eating Paleo-style, but have kept dairy. I’ve reduced mine due to some sensitivities in Charlie, my baby, through breastmilk. However, something totally neat is that ALL of Cabot Light Cheddars are lactose-free and gluten-free! How cool is that?! I have been able to indulge in these delicious cheeses without the guilt, and without the accompanying eczema that I’ve been dealing with for the past several months when eating other cheeses. Woohoo!
Here is what I was sent to try out.
The side of the box there says, “World’s Best Cheddar,” and I’m inclined to believe it. My favorite was the Sharp Extra Light, which I ate plain with some pepperoni, and I also used shredded on top of a salad. I hear that these cheeses melt beautifully in recipes like pizza, casseroles, and macaroni and cheese dishes. The Vermont Sharp was another flavor that we enjoyed as well. We melted that one in with some eggs for a Breakfast for Dinner kind of a night. YUM!
