There are few things more Texan than a heaping bowl of tortilla chips paired with some spicy salsa and tons of guacamole. Tex Mex food is at the top of my list, even though I’m almost always paleo these days.
I’ve had to get creative, because I have grown to LOVE guacamole. In fact, I started loving it right about the time I went paleo in January. Since I don’t eat it with corn, flour, or wheat, I’ve found other ways to enjoy it. My current favorites are as a salad dressing substitute and also as my dip of choice with sweet potato chips. YUM!
I find reasons to eat guacamole. I love the new little 100 calorie packs because it helps with the whole portion control thing, which I’m not the best at adhering to on my own!
