Right now, peaches are so fresh and juicy and ripe. I wanted to share a recipe that was satisfying, sweet, and a little different. I was originally thinking of a peach cobbler, but this recipe ended up being more of a peach crumble. I hope you enjoy this peach crumble recipe to use up and enjoy those fresh summer peaches!
Fresh Summer Peach Crumble
Peach Layer Ingredients:
6 fresh peaches, peeled, pitted and thinly sliced
1/3 C sugar
1/3 C brown sugar, firmly packed
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp fresh squeezed lemon juice
2 tsp cornstarch
Crumble Topping:
2 C flour
1/2 C sugar
1/2 C firmly packed brown sugar
2 tsp baking powder
1 tsp salt
3/4 C unsalted butter, cold cut into pieces
1/2 C boiling water
To Make:
1. Preheat oven to 400 degrees. Spray baking dish with non-stick cooking spray.
2. Combine peaches, white and brown sugar, cinnamon, nutmeg, lemon juice, cornstarch in a medium to large bowl. Stir to mix. Pour this mixture into the baking dish.
3. Bake for 10 minutes.
4. Meanwhile, in a medium bowl, begin working on your crumble topping. Combine flour, white and brown sugar, baking powder, salt and butter.
5. Using a pastry blender, cut the butter into the dry ingredients until the mixture is similar to coarse meal. Now add the boiling water, stirring until it is mixed through.
6. Remove peaches from the oven after 10 minutes, and drop spoonfuls of the crumble mixture over the peaches.
7. To keep the oven clean, place the baking dish on top of a cookie sheet. Bake for 30 more minutes, or until the topping is golden and peaches are tender.
To make it even more decadent, top with a scoop of ice cream, or a dollop of whipped cream.
