Summer is here! I love the tangy flavor of key lime pie in those hot months. This key lime cheesecake dip is easy to throw together for a quick dessert or side dish to take with you to a BBQ, picnic, potluck supper, or church gathering. It is perfect with fresh fruit, Nilla wafers, graham cracker sticks, or pretzels. I want to make up a batch right now!
Key Lime Cheesecake Dip

You Will Need:
2 (8oz) bricks of cream cheese – softened
1/2 cup granulated sugar
1/4 cup milk
1 teaspoon vanilla extract
4 Tablespoons of lime juice
2 Tablespoons lime zest (from 2 limes)
Green food coloring (optional)
2 Tablespoons Graham cracker crumbs, for garnish
Lime slices, for garnish
To Make:
1. In a large mixing bowl, add the softened cream cheese, sugar, milk and vanilla. With an electric mixer, beat until smooth and creamy.
2. Mix in the lime juice and green food coloring (optional) and stir well to incorporate.
3. Fold in 1 Tablespoon of lime zest (cover and store the remaining lime zest for use right before serving).
4. Cover the dip and refrigerate until ready to serve.
5. Before serving, sprinkle with remaining lime zest, graham cracker crumbs and/or a lime slice.
6. Serve with fresh strawberries, pretzels or cookies.
You can store this dip covered in the refrigerator for up to 3 days, and the flavor just keeps getting better! That’s perfect for making ahead or for hanging on to any leftovers you might somehow end up with.
