Okay, my paleo challenge folks – who is up for a wee little mini challenge? Let’s focus on vegetables this week. Not many of us love vegetables the most, so it’s something that we have to work at eating each day, right?
Well, here is your challenge:
Paleo Vegetable Ideas
Before you all get REALLY technical, please note that I do realize that fruits such as squash and tomatoes do appear in this list. I’m leaving them in my vegetable recommendations because they are widely believed to be or thought of as vegetables by the general population. Don’t knock my methods! 🙂 Do keep in mind that starchy or sweet “veggies” should be eaten in moderation.
- Mustard Greens
- Greens Onions
- Lettuce (there are tons of varieties – butter, red leaf, Romaine, and more)
- Bell Peppers
- Peppers (all kinds)
- Wheat Grass
- Cabbage (all varieties)
- Squash (all kinds – zucchini, spaghetti squash, butternut squash, Delicata, and more)
- Swiss Chard
- Turnip Greens
- Sweet Potato
- *Some paleo folks eat green beans, as it is mostly pod rather than bean – you make the choice for yourself on that one!
