You are going to be shocked when you read the ingredient list of this pickle dip recipe. If you have never heard of this flavor combination before, you’re in for a treat. It’s a tasty dip that feels a bit lighter than a traditional cream cheese appetizer because of the addition of the sour cream.
Give this a try at your next Christmas party or other gathering, and let me know what you think! It is creamy and light, yet hearty and could make a meal all on its own if you’re lucky enough to end up with some leftovers.
Ingredients
1 cup sour cream
8 oz cream cheese, softened at room temperature
1 teaspoon onion powder
2.5-3 oz package beef (lunch meat should be chopped or use chopped dried beef)
1 cup finely chopped sweet gherkins or dill pickles
To Make:
1. In a medium mixing bowl, add the sour cream, softened cream cheese, and onion powder. With an electric mixer, mix on low speed until smooth and creamy.
2. Fold in the pickles and beef with a rubber spatula and gently mix until well incorporated.
3. Cover and chill for 2 hours in the refrigerator. Overnight is even better to let the flavors mix!
4. Transfer to serving bowl right before serving. This dip goes well with assorted crackers, chips, or fresh veggies.
