Welcome back to the Paleo Challenge! I hope that you are enjoying living your life in the paleo way.
Filling up on fruits, vegetables, meats, nuts, seeds, berries, and healthy fats is so much more nourishing and satisfying that prepackaged food, wouldn’t you agree?
How did you do with last week’s mini-challenge? I challenged you to make paleo copycat recipes to see just how delicious a whole-foods approach to “regular” food can be! I love making paleo spaghetti out of spaghetti squash, and I made some paleo meatloaf last week in the crockpot. It was pretty good, even without the use of traditional fillers like crackers or oats. The whole family ate it without complaining, so we’ll call that a win. 🙂
Paleo Baking Mini Challenge
Dessert is my favorite meal. No, really, it is. You know, I have several favorite dessert recipes, but most of them are NOT baking related at all. I have an aversion to exact measurements, and we all know that baking is scientific! Luckily, most of my recipes turn out okay in the end. 🙂

Baking without grains is not impossible, but it IS different. Be sure to read measurements carefully and do not substitute 1:1 coconut or almond flours. They work very differently in recipes and aren’t interchangeable as substitutes for one another.

- Blackberry Cobbler (I found them for .99 a container this week!)

I try out Paleo options from time to time but today I went to the library and got a Paleo cookbook. It’s called Paleo Indulgences by Tammy Credicott. Look forward to the some of the “sweet” recipes in there. 🙂

With my little one’s first birthday coming up, I’m on a hunt for a “cake” recipe that’s healthy enough for her and allergy free. I’m thinking I’ll be searching through my Paleo cookbook this week for a dessert option.

I’m awful in the kitchen, but the one thing I do attempt every now and then is baking…although I’ve never tried paleo baking! But I probably need to check out some of these recipes…we’re trying to eat healthier around here!
